  • 1 cup Quinoa
  • 3 medium tomatoes diced
  • 1 big bunch of chopped green onion
  • 1 cup of chopped parsley
  • 2 carrots grated
  • ¼ cup olive oil
  • 1/4cup lemon juice
  • Salt to taste
  • 2 cups water


Boil water in a pot and add some salt and Quinoa. Lower the heat, cover and cook the Quinoa for 15 minutes. Cool the cooked Quinoa at room temperature and fluff it with a fork to separate the grains.

In a bowl, combine tomatoes, carrots, green onion, cucumber, and parsley. Season with salt, lemon juice, olive oil and mix the salad. Finally, add the fluffed Quinoa and enjoy the yum salad!

Recipe 2- Greek Quinoa Salad Recipe

A refreshing salad perfect to have after an intense workout!


  • 1 1/2 cups Quinoa
  • 3 cups vegetable broth
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic minced
  • 1 lemon juice
  • 3 tablespoons olive oil
  • 1 cup cherry tomatoes, sliced in half
  • 1/3 cup chopped parsley
  • 1 onion diced
  • 1/3 cup chopped cilantro
  • salt to taste
  • pepper to taste
  • 1/2 cup crumbled feta cheese


In a pot boil the vegetable broth and cook the Quinoa with a pinch of salt. Cover for 15 minutes and cook on low heat, give it an occasional stir. Let it cool and then fork it up.

Combine lemon juice, apple cider vinegar and olive oil and set aside.

In a bowl toss onion, cherry tomatoes, cilantro, garlic, and Quinoa. Pour the salad, dressing over this mixture and add salt and pepper according to taste. Top it off with the crumbled feta cheese and enjoy this scrumptious fresh and healthy dish.
