Recipe 3. Masala Bhindi

Masala Bhindi

Ingredients

  • 250 gm bhindi
  • 1 large onion sliced
  • 7 tablespoon mustard oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon chopped ginger
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon fennel powder
  • 1 1/2 teaspoon dry mango powder
  • 1 juice of half lemon
  • Salt – to taste

Method

Heat mustard oil in a pan, add cumin and fennel seeds and let them crackle. Add the sliced onions and fry them till brown. Add turmeric powder, bhindi and salt to taste. Cook on low heat and make sure you don’t cover the bhindi. Once the bhindi is done sprinkle the dry mango and fennel powder. Finally, add the lime juice and give a quick stir. Take off the heat and serve.

Recipe 4. Pommes Gratin

Pommes Gratin

Ingredients

  • 3 medium potatoes peeled and thinly sliced
  • 5 tablespoons grated cheese
  • 4 teaspoons of butter
  • 1 cup cream
  • 2-3 cloves of garlic, smashed
  • 1 teaspoon thyme
  • A pinch of nutmeg powder
  • Pepper to taste
  • Salt to taste

Method

Add one cup of cream and 2 teaspoons of butter in a pan and put on low heat. Add garlic, thyme, pepper, salt and mix them. Cook till the cream reduces a bit and then add sliced potatoes and 3 tablespoons of grated cheese. Cook till the cream thickens and coats the potatoes. Grease a baking dish and pour the creamy potatoes in the dish. Sprinkle the remaining butter and cheese over this mixture and bake at 180° for 10 minutes. Serve hot!
